Preheat oven to 400 degrees
Coat a 2 quart baking dish with cooking spray.
Ingredients:
8 ounces mushrooms
1 can (14 ½ ounces) beef broth
1 can (10 ounces) Campbell’s Condensed French Onion Soup
1 cup uncooked white rice
2 teaspoons fresh chopped thyme
¼ cup cold butter
24 ounces frozen homestyle meatballs – approximately 12 ounces
4 ounces shredded Swiss or Gruyère cheese
In a prepared baking dish, add mushrooms, broth, soup, rice and thyme. Stir to combine. Top with butter slices. Cover with foil. Bake for 30 minutes.
Uncover, add meatballs. Bake, uncovered until meatballs are cooked to 165 degrees and rice is tender, approximately 20-30 minutes. Top with cheese.
