Slow Cooker French Dip Sandwich
Ingredients
For the Beef
3–4 lb beef chuck roast
1 tbsp olive oil
1 tsp salt
1 tsp black pepper
1 tsp garlic powder
1 tsp onion powder
For the Au Jus
1 large onion, thinly sliced
3 cloves garlic, minced
4 cups beef broth
1 packet au jus gravy mix
1 tbsp Worcestershire sauce
1 tsp dried thyme
1 bay leaf
For Serving
6 hoagie rolls or French rolls
6–12 slices provolone cheese
Fresh parsley (optional)
Instructions
Step 1: Sear the Roast (Optional)
Season the chuck roast with salt, pepper, garlic powder, and onion powder.
Heat olive oil in a skillet over medium-high heat.
Sear the roast for 2–3 minutes per side until browned.
Step 2: Add to Slow Cooker
Place sliced onions and garlic in the bottom of the slow cooker.
Add the roast on top.
Step 3: Prepare the Broth
In a bowl, combine:
Beef broth
Au jus mix
Worcestershire sauce
Thyme
Pour over the roast.
Add the bay leaf.
Step 4: Slow Cook
Cook on Low for 8–10 hours or High for 4–5 hours.
Beef should be fork-tender and easily shredded.
Step 5: Shred the Beef
Remove the roast from the slow cooker.
Shred with two forks.
Return the shredded beef to the cooking liquid and let it soak for 15–20 minutes.
Step 6: Assemble Sandwiches
Split the rolls and lightly toast them.
Pile beef onto each roll.
Top with provolone cheese.
Broil for 1–2 minutes until cheese melts.
Step 7: Serve

Serve hot with small bowls of strained au jus for dipping.
