Today, I’m taking you to the island of Corsica to recreate one of their most comforting, rustic dishes: a Braised Chicken with Lemon, Sage, and Parmesan.

This video teaches how to build deep, complex flavors using simple, fresh ingredients and creating a rich, restaurant-quality sauce right in the pan.

  2. I shall be trying this in honour of my dad. Thank you so much!
He holidayed in Corsica from 1965 until his death in 81. He spent his summer holiday in Algajola. Every spring he travelled to find a better place but never did.😊

  3. I love sage, but other than Saltimbocca, I barely have any recipes with it. Probably because it's such an intense herb, it's not as widely used? I'll try this for sure!

  4. I always think this history is interesting,French hero is Italian and Italian unification hero theoretically is French.

  5. I too have a mountain of sage in my garden with few recipes in which to use it!

I will definitely try this one.. maybe even tonight!! Love your channel (and your cookbook) keep it up!

  6. I don't have tarragon in my garden so any time a recipe calls for tarragon i use sage which i have in abundance. 😊yw.

  7. I was going to do something similar with tarragon for dinner but will try this since I have a sage plant. I noticed you added the Parmesan while the sauce was still boiling. I thought that would cause the cheese to separate. ??
