Ingredients:
¾ cup rolled oats
¾ cup caster sugar
1 cup coconut flakes
1 cup plain flour
125g unsalted butter
3 tbsp golden syrup
1 tsp bicarbonate soda

Method:
Preheat the oven to 180°C.

Line two baking trays with baking paper.

In a large bowl, combine the dry ingredients.

In a small saucepan over low heat, melt the butter with the golden syrup until smooth. Remove from the heat and add the bicarbonate.

Pour the wet mixture into the dry ingredients and mix until everything is evenly combined.

Roll the mixture into tablespoonfuls, place on the prepared trays, and leave about 5cm between each biscuit. Flatten slightly with the palm of your hand and bake for 10–12 minutes.

  1. Hi Justine, would you clarify something, you mention that you add one cup moist coconut flakes in the recipe description but watching you on TV you say it is one quarter cup moist coconut flakes? That's a big difference. I look forward to hearing back from you. Thank you.
