Amanda had to leave France very suddenly for a family situation, so this week’s video looks a little different.
While things are okay, we’re taking you along for a quieter few days in Connecticut. Exploring Fairfield County and making a simple corn chowder.
Back to our French château very soon.
Simple Corn Chowder Recipe (Impromptu!)
Serves: 4–6
This chowder is even better the following day
Ingredients:
8 slices bacon (optional, for garnish)
2 tbsp butter
1 medium onion, diced
3 stalks celery
2 cloves garlic, minced
Fresh thyme & dill to taste
2 TBS flour
3 cups roasted or grilled corn (fresh or frozen)
2 medium Yukon gold potatoes, diced
1/2 c dry white wine
3 cups vegetable stock
1 cup whole milk
1 cup heavy cream
Salt & pepper, to taste
Instructions:
Cook bacon until crisp. Set aside, keep a little of the fat in the pot if desired
Over medium heat, add butter until melted
Sauté onion, celery, thyme & garlic until soft
Sprinkle flour over vegetables and cook for several minutes until flour is slightly golden
Increase heat and add white wine, stirring until mostly evaporated
Add potatoes and stock. Simmer 10–15 minutes until potatoes are tender
Lightly smash part of the soup for a thicker texture (optional)
Lower the heat and add corn, milk and cream. Simmer gently (don’t boil)
Season with salt & pepper, and add fresh dill
Serve topped with crispy bacon, grilled bread or oyster crackers

Prayers for your daughter and all of you. How fast things can change!😢
You still gave us a great video. The corn chowder looked yummy. I will make it!
Big hugs and best wishes.❤
love your cooking videos the best, and the excursion to the museum peek into your childhood haunts are fun. [7:02] corn chowder yum
Glad all is fine now…..that chowder looked fantastic…I could almost taste and smell it
All the best for your girl! Your soup looks aw-so-delicious, I have to do it ordinary corn, as I never ever came across roasted corn here in Ireland.
So happy you and your daughter are back home with Lincoln. I hope she makes a full recovery and is fighting fit soon. The chowder looks delicious. Very envious of your knife skills. As a protected late life child I wasn’t allowed near a sharp knife until I started work at 15. 😂😂😂😂😂 over 60 years later I can still hear my mothers voice when I pick up a knife😂
Glad your daughter is on the mend. Scary when they are that far away x
Thanks for the tour of Connecticut it looks so beautiful. Hope all is well with yiur daughter.
Big hugs to your family❤❤❤
Amanda and Lincoln, wish your daughter good health…and all 4 of you happy life in France!
Maarten
I'm sorry your child was ill, but SO glad she's doing better. Even though she's not interested in being in your videos, please let her know I 🙏 pray she's well soon. I love the videos you and Lincoln do and the animals you care for. I hope life settles down some for you all soon. Wishing you all the best a little old worry-wart from Louisiana. See you next video 😃.
I know this was terribly disruptive but how disappointing for your daughter. I’ll be thinking of you all as she readjusts to being back in France. Be well everybody. ❤ Margie
Thank you for indulging us with a video in trying times Amanda. I hope your daughter is doing well. I’m going to make your soup, I should be able to roast corn in the oven, who knew you could buy roasted corn in a bag. 🇨🇦
I think I saw the Hoyt Barnum house in Stamford CT. My fifth great grandfather built that!
LOVE
hope all ok
Amanda … Our #HuntingtonFamily settled in Connecticut in 1633 … One of our ancestors, Samuel Huntington, signed the Declaration of Independence and lead the Continental Congress, and later was a Governor of Connecticut for a decade. I lived in West Haven and New Haven while in college. Our best wishes for your daughter … we hope she makes a full recovery.
As an American I have to say I'm disappoint ed how you reference
Our country.
I get you love France but talking negatively about our beautiful country is just adding to the problems in this world .
I'm out
Unfortunately, Bendel went down with Barneys during covid. 😭
These life stories are so well done and real.love that you take us along while not losing your privacy.loved the cooking and site seeing.
Hey you're 'French' (almost) cream, butter and milk, particularly when organic and raw is wonderful for our health and now the latest research backs it up. Perhaps you can't find the same quality in the US. So the chowder is a healthy dish. All the best with your daughter's health.
Prayers for your daughters health ❤
Oh yes please ! I could just eat that. Delicious.x
thank you for the field trip in CT…. it is my home state and i miss it sometimes… i enjoyed it. I hope your daughter recovers quickly.
Thank you Amanda and Lincoln soup looks fantastic , good to see y'all again
I hope your daughter is feeling better now. Always better with your Mum around I expect. Hope it’s getting warmer over there now as well and look forward to seeing your kitchen renovation.
I can’t wait to try the chowder. I’m wishing for cooler days here in Oz.
I hope your daughter makes a full recovery. I'm sure it must be frustrating to be so young and have your health issues get in the way of living your life.
P.S. I love the spatula microphone!
🙏👍❤
Sending good thoughts from Canada hoping your daughter is on the mend.
You are from my neck of the woods! We live in Stamford! Had our wedding reception at the Museum and Nature Center.
Life happens….without a plan….
Glad your baby is back home with you. They’re always our babies.
The Northeast US has had a harsh winter that seems to be stubborn about leaving. Sorry you needed to experience some of it… but Stamford does look like a lively place. I'm envious that you're able to afford Whole Foods. I certainly can't!
LOVE your microphone holder 😂
