SPRING POTATO SALAD
With French vinaigrette

As the weather starts to feel a little more like spring, I find myself craving lighter, fresher dishes like this 🌱

This spring potato salad with a sharp French vinaigrette is everything I want this time of year — tender baby potatoes, sweet peas, crisp asparagus and loads of fresh herbs, all tossed in a punchy Dijon dressing. Simple, vibrant and perfect for sunny lunches or sharing at the table.

It’s one of those salads that’s even better when the potatoes are still slightly warm so they soak up all that lovely vinaigrette.

Fresh, zingy and full of spring flavour

Ingredients
750g baby potatoes
125g asparagus
125g peas
Bunch parsley chopped
Bunch of chives chopped
5 spring onions chopped
1 red onion sliced
Zest of 1 lemon

Vinaigrette
4 tbsp olive oil
2 tbsp red wine vinegar
1 tbsp Dijon mustard
Optional 1 garlic clove grated
Salt and pepper

Method
1. Boil the potatoes until fork tender. Drain and set aside
2. Cook the asparagus and peas for 3-4 minutes, then plunge them into iced water to stop them cooking
3. To make the vinaigrette mix together all of the ingredients in a bowl until it’s well combined
4. Take a large serving platter and add the potatoes (it’s best if there still slightly warm as they will absorb the vinaigrette better)
5. Add all of the other ingredients and pour over the vinaigrette. Give the salad a good mix so that everything is well coated
6. Serve with extra parsley and pea shoots
