I am struggling to find a good easy breakfast. The crustless quiche is a great idea! And you make it ahead of time. I often make traditional quiche with pastry but sometimes it feels like there is more crust than egg and filling.
I reuse the cooking juices from my whole chicken in my slow cooker. I strip the meat off the bones, add the bones and skin back to the slow cooker add apple cider vinegar and water to cover and leave it so cook for several hours to make broth. I use it in soups, pasta sauces or even just as it is as a pick me up this time of year lots of collagen and goodness from the bones. ❤

The crustless quiche looks so good, I would like to try that….I love quiche but find myself putting off making it as the pastry is time- consuming and gets messy! Crustless is the way! Adding the ricotta to increase the protein and give extra flavour is a great idea – as is the addition of the walnuts to the meatballs. I like cooking with ground beef. Tonight I’ll make a dish where the ground beef is sautéed with diced red onion, red peppers and garlic, seasoned with cumin, oregano and salt, and later will add some chopped sun dried tomatoes and kale. It’s really good.

You are so amazing to me having watched you preparing so many delicious meals in one day. I realize that it saves time during the week but I don’t know how you do it with having a full time job and a family, creating videos, and maintaining a website. You must all be very healthy and energetic!❤

I love crustless quiches – it's all I ever make. I enjoy for breakfast but my favorite is to have it for lunch with a salad. It's a very forgiving recipe and a great way to use up bits in the fridge.
Hello Diane. So kind of you to develop this video on high protein items that can be eaten for breakfast. Everything looks delicious and healthy using readily available ingredients. I like the crustless quiche. I’ve actually made it with chopped parsley, sliced onions and Greek yogurt. (Cream fresh is rarely available and very expensive. About $5.95 for less than 6 ounces.) I will try the ricotta as it will be a great alternative. I bake it in a small spring form pan. I suppose I could incorporate some fish like hake or salmon, (smoked or frozen) too.
I must try the meatballs with chopped walnuts and cheese. Extra protein.
Par baking and browning before using is cleaver. Never thought of it as a breakfast item but it would be delicious. I must make the leak gratin and the chicken legs. Par boiled and later baked is a good idea and the broth is excellent for soup as you have shown.

Do you purée the soup? My 🇫🇷mother-in-law served vegetable soup as the first course for dinner almost every day, but she puréed it. Absolutely delicious.
