For the marinade:
– 600ml Red Wine
– 750g short ribs
– 3 Bay leaves
– 2 Onions
– Salt/Pepper
Let marinate overnight!
For the Beouf Bourgignioun:
– Marinated Beef
– Diced Bacon
– 1 Onion
– 3 Carrots
– 2 Celery stalks
– 2 garlic cloves
– mushrooms
– 2 TS Tomato paste
– Flour
– 50g Butter
– Rest of the marinade
– 400ml beef stock
– fresh thyme/ fresh rosemary
– 4-5 Juniper berries
– Salt/Pepper
– (smoked paprika: optional)
Serve with spiced red cabbage and Knödel!
