Finally! The long form of what I posted earlier on Instagram Reels. More details! We delve more into the rationale and choices for this pairing. And a little cultural lesson.
This is the first of many food and wine videos I will be posting. I have teamed up with Isaac Bignell (@YYCCheeseDaddy on Instagram) from Say Cheese at Crossroads Market in Calgary, and will be posting cheese and wine pairings with him. I have found that there’s lots of quality wine content on social media, but little content on the food and wine experience. I am hoping to remedy that!
My first wine pairing video features a favourite of mine – @paresbalta #cava (link: excellent, and offering high value. Vegan, organic, super fine bubbles, this should be one of your go to sparkling wines. It’s versatile and will go with most foods. I picked this up at Highlander Wine, typically $15-$20.
Isaac and I explored a straightforward and geeky cheese pairing. And a little favourite cava pairing of mine (Thanks, Cohen @ Regina’s Fine Meats).
Chaource ( offers up a reasonably well-available traditional pairing. If it works for champagne, it sure as hell worked beautifully with this cava.
For the geeky pairing, we embraced our inner vegan and went with Calgary’s Flora Fromage truffle and black pepper cashew cheese ( This was a provocative pairing, so pick up some of their products and this cava and enjoy it with friends near the end of a meal (cheese course, anyone?).
