These French Lemon Madeleines are soft, buttery, and delicately flavored with fresh lemon. ✨ Makes 12 madeleines
📌 Ingredients:
• 3/4 cup (95 g) all-purpose flour
• 1/2 tsp (2 g) baking powder
• 1/8 tsp (1 g) fine salt
• 2 large eggs (100 g without shells) room temperature
• 1/2 cup (100 g) granulated sugar
• 1 tsp (4 g) vanilla extract
• Zest of 1 large lemon (2–3 g)
• 1 Tbsp (15 g) fresh lemon juice
• 7 Tbsp (100 g) unsalted butter, melted and cooled
For the Pan
• 1 Tbsp softened butter
• 1 Tbsp flour
👩🍳 Instructions:
1. Beat the eggs and sugar until pale and fluffy.
2. Add lemon juice, lemon zest, and vanilla.
3. Add the flour, baking powder, and fine salt.
4. Mix on low speed until combined.
5. Add the melted butter. Dont overmix.
6. Chill the batter for at least 1 hour.
7. Fill the madeleine pan 3/4 full.
8. Bake at 425°F (220°C) for 3 minutes, then reduce to 375°F (190°C) and bake for 5–6 minutes.
9. Cool and enjoy!
