For a second, I thought I’d landed in the south of France. Nope — this is Niagara, and York Vineyards is the only winery in Canada dedicated entirely to traditional method sparkling wine. Hand-riddled, aged on the lees, disgorged the old way — the same painstaking process used in Champagne. The result is one of the best sparkling wines in the country.
