    Ingredients
    4 bread slices
    2–3 tbsp gram flour (besan)
    1 small onion, finely chopped
    1 small tomato, finely chopped
    1 small capcicum, finely chopped
    1–2 green chillies, finely chopped
    Fresh coriander, chopped
    Salt to taste
    Black pepper
    Water (to make a smooth batter)
    Butter or oil for roasting
    Grated mozzarella or processed cheese
    Mixed herbs/oregano
    Chilli flakes

    Method
    In a bowl, mix besan, onion, tomato, green chilli, coriander, salt, and pepper.
    Add water little by little to make a medium-thick batter.
    Dip one side (or both sides) of each bread slice into the batter.
    Heat a pan with a little butter or oil.
    Place the coated bread on the pan and cook on medium flame.
    Flip when golden brown.
    Sprinkle grated cheese on top, cover the pan with a lid, and cook until the cheese melts.
    Finish with oregano/mixed herbs and chilli flakes.
    Serve hot with tomato ketchup or green chutney.
