We tried. We failed. We came back harder. 💪
If you watched our first Crème Brûlée attempt, you already know it did NOT go to plan. The custard was wrong, the crack was a disaster, and the critics were NOT impressed. But we made a promise — we’d figure it out and come back better. This is that video.
This time, we ditched the water bath and used the Fotile steamer to achieve the silkiest, most perfectly set custard you’ve ever seen. Was it worth it? Let’s just say the critics had nothing left in their bowls.
🍮 What We Changed:
— The steamer method: low & slow at 85–95°C for a wobble-perfect custard
— The temper technique: no more scrambled eggs in our cream!
— The sugar layer: thin, even, and torched to a glass-like golden crack
📋 The Winning Recipe:
• 600g pouring cream
• 60g caster sugar
• 1 tsp vanilla bean extract
• 7 egg yolks
• Hot water (for the steamer)
