Ingredients
French Toast Layers
1 cup (225 g) full-fat cottage cheese
3 large eggs
¼ cup (25 g) almond flour
1 tbsp maple syrup
1 tsp vanilla extract
½ tsp ground cinnamon
Pinch of salt
Maple Bacon Filling
4 slices bacon, cooked crisp and crumbled
1 tbsp maple syrup
2 tbsp softened cream cheese (optional, for extra richness)
For Serving
Extra maple syrup
Fresh berries
Powdered sweetener (optional)
Instructions
1. Cook the Bacon
Cook the bacon until crisp.
Drain on paper towels and crumble into small pieces.
Toss the crumbles with 1 tablespoon maple syrup and set aside.
2. Make the Batter
Add to a blender:
Cottage cheese
Eggs
Almond flour
Maple syrup
Vanilla
Cinnamon
Salt
Blend until completely smooth.
Let the batter rest for 2–3 minutes.
3. Cook the Layers
Heat a nonstick skillet over medium-low heat.
Lightly grease if needed.
Pour about ¼ cup batter per round.
Cook for 2–3 minutes until the bottom is lightly golden and the surface begins to set.
Flip carefully and cook another 1–2 minutes.
Repeat until all batter is used.
You should have 4–6 thin, flexible layers.
4. Build the Stack
Place one layer on a plate.
(Optional) Spread a thin layer of softened cream cheese.
Sprinkle with maple bacon crumbles.
Add another layer.
Repeat until all layers are stacked.
5. Warm the Stack
Place the assembled stack on a baking sheet.
Bake at 350°F (175°C) for 5–7 minutes to warm through and soften the layers.
6. Serve
Drizzle with maple syrup.
Top with berries or a light dusting of powdered sweetener if desired.

Cook the layers gently over medium-low heat.
Keep them relatively thin (about ¼ inch / 6 mm).
Avoid overcooking, which makes them cakey instead of tender.
