Ingredients
2 tbsp coconut oil
1 tsp mustard seeds
1 tsp cumin powder, coarsely ground
1 tsp fennel powder, coarsely ground
1 sprig curry leaves
3 onions, finely chopped
1/2 tsp turmeric powder
1 tsp red chilli powder
1 tsp garlic paste
1 tbsp thick tamarind pulp
1/2 cup fresh grated coconut
1/2 tsp garam masala
Salt to taste
250 g french beans, steamed
250 g pumpkin, steamed
2 tbsp fresh coriander, chopped

Method
-Heat coconut oil in a pan. Add mustard seeds and let them splutter. Add cumin powder, fennel powder and curry leaves.
-Add chopped onions and sauté for just 2 minutes till slightly soft.
-Add turmeric, red chilli powder, garlic paste and tamarind pulp. Mix well.
-Add grated coconut and cook briefly to form a basic masala.
-Add garam masala and salt. Mix well.
-Add steamed french beans and pumpkin. Gently mix so the vegetables get coated with the masala.
-Finish with fresh coriander and give it one last mix. Serve hot.
