Ingredients

For the Aloo:

Baby potatoes (boiled)

Kashmiri red chilies (soaked)

Garlic cloves & Ginger

Cornflour

Rice flour (chawal ka aatta)

Salt to taste

Oil for frying

For the Green Chutney:

Raw mango (kaccha aam)

Green chilies & Fresh coriander

Garlic & Ginger

Salt, Coriander powder, Cumin (jeera)

Super Easy Steps

Make the Spicy Thecha

Using a silbatta (or a mortar and pestle), coarsely grind the soaked red chilies, garlic, and ginger into a thick paste.

Coat the Potatoes

Cut the boiled baby potatoes into halves (keep the skin on for extra crispiness)

Add the red chili paste, cornflour, rice flour, salt, and a splash of water

Mix everything well with your hands until the potatoes are evenly coated

Fry to Perfection

Deep fry the coated potatoes in hot oil until they are completely golden and crispy

Make the Chutney

Blend the raw mango, coriander, green chilies, garlic, ginger, and spices to make a tangy green chutney

Serve Street-Style!

Toss the hot crispy potatoes with some chaat masala

Serve them in a street-style paper plate, topped with onion rings and a generous spoonful of the tangy green chutney!
