Whether it’s breakfast, lunch or a light supper, an omelette is always popular here. And this was that most French of dishes, an omelette aux fines herbes, with the first herbs of the Spring picked from the garden; two eggs and a fragrant mix of chives, parsley, tarragon, and chervil.

Any of our chef’s and frying pans would be perfect – Claire Thomson says her Netherton Foundry frying pan is her favourite for making a souffle omelette – but we love our 7” chef’s pan, the ideal size for a delicious lunch.

Opinions on omelettes are numerous, some say that the classic French omelette, as pale as the heroine of a Victorian novel, cannot be bettered but we prefer a little colour.
