Beef Bourguignon 🥩 🍄 🇫🇷

Ingredients:

• 5 pounds beef chuck, cut into chunks
• Carrots, peeled and sliced
• Onions, chopped
• Fresh parsley, chopped
• Thyme
• Bay leaves
• 3 cups red wine
• Tomato paste
• 6 cloves garlic, minced
• Mushrooms, sliced
• Pearl onions, blanched and peeled
• bay leaves

Instructions:

1. Preheat your oven to 325°F (163°C).
2. In a Dutch oven, sear the beef chunks over medium-high heat until browned. Remove and set aside.
3. In the same Dutch oven, sauté chopped carrots, onions until translucent. Add minced garlic and cook for a minute.
4. Stir in tomato paste and cook for a few minutes, allowing it to caramelize.
5. Pour in red wine to deglaze the pot, scraping up any browned bits. Bring it to a simmer.
6. Add the seared beef back to the pot. Add carrots, fresh parsley, thyme, and Bay leaves.
7. Cover the Dutch oven and transfer it to the preheated oven. Let it cook for about 2 hours.
8. Meanwhile, sauté sliced mushrooms in a separate pan until golden brown. Set aside.
9. Blanch pearl onions, peel them, and sauté in a bit of oil until they are golden.
10. After 2 hours of cooking, add the sautéed mushrooms and pearl onions to the beef mixture. Continue cooking for an additional hour or until the beef is tender.
11. Adjust seasoning to taste and garnish with additional fresh parsley before serving.
