I finally tried the viral Japanese cheesecake and now I understand the hype.
It’s light, airy, and so soft it literally jiggles when you touch it. Nothing heavy or dense, just simple ingredients and a lot of technique coming together.
This is one of those desserts you make once and immediately see why the internet fell in love with it.
Viral Japanese Cheesecake
Ingredients
24 oz Siggi’s vanilla yogurt
1 tsp vanilla bean paste
1/4 cup diced strawberries
8–10 Biscoff cookies (whole, for layering)
4 Biscoff cookies (crushed, for topping)
Biscoff cookie butter, as needed
Instructions
Add vanilla bean paste and diced strawberries to the yogurt and stir well.
Gently press the whole Biscoff cookies down into the yogurt.
Spread a thin layer of cookie butter on top, then sprinkle with the crushed cookies.
Pipe a little extra cookie butter on top if you want.
Cover and refrigerate for 24 hours.

This is a great alternative to cheesecake that tastes like cheesecake, without baking.

It is already going up in price. Like I’m not even going to tell you okay because you already know! And the Biscoff actually tastes better. And who will eat the Biscoff? People who crave something delicious! And how will we get omegas? And how will we get fibre if it all runs out??? And it should be chilled too. Never baked.

Why the gloves?
Use a blender, add the yogurt and add the cookies. In a separate bowl 🥣 mix cream cheese with whipped cream until fluffy. After you blend the yogurt and cookies until blended (1-2 minutes) add all the ingredients together in a bowl, slowly layering with a spatula on top of each other. Refrigerate for 3 hours and enjoy.

Well damn. Late to the party, but then again i don't really keep up with the socials. I use lemon yogurt with nilla wafers instead. Lemon is my favorite. Been doing this way since 2005 when my sister made lemon cake for the first time (she was in her baking phase that year). Didn't do vanilla with biscoff before (even though my friends were doing that already), but i may have to try this next time i have yogurt in my fridge (i don't buy that often). Much love and respect.
