Crème brûlée (28 cm dish):
800 ml heavy cream
10 egg yolks
120 g sugar
1–2 tsp vanilla
Bake at 130°C (265°F) in a water bath for about 40–45 minutes.
Ovens can vary, so don’t rely on time alone — watch the texture.
The edges should be set, while the centre still has a gentle wobble.
Soft, silky and just slightly trembling — that’s exactly what you’re looking for.
Chill in the fridge for at least 4 hours (or overnight).
Before serving, sprinkle sugar on top and caramelise it until golden and crisp.
