French style Chicken Stew – Simple, Healthy, and Full of Meaning
This easy French chicken stew recipe is a classic comfort dish made simple for any night of the week. Cooked in a Dutch oven, this country-style version uses smoked chicken for deep flavor—while skipping salt, pepper, and wine for a more heart-healthy approach.

🍲 Recipe Overview
• Prep Time: 10 minutes
• Cook Time: 50 minutes
• Total Time: 1 hour
🥕 Ingredients
• 6 free-range chicken thighs (or smoked chicken) only four will fit in a normal Dutch oven, the other to can be left out or you will need to rotate to brown all the chicken.
• 3 tbsp extra virgin olive oil
• 2 cloves garlic, minced
• 1 large yellow onion, quartered
• 3 carrots, chopped
• 4–6 small red potatoes, halved
• 1 tsp Herbes de Provence
• 2 cups chicken broth
(Optional traditional ingredients: leeks, celery, white wine, salt, pepper)

👨🍳 Instructions
1. Heat olive oil in a Dutch oven over medium heat
2. Brown chicken skin-side down (3–4 minutes)
3. Add garlic and (optional) wine, I use chicken broth instead, simmer briefly
4. Turn chicken over and cook for another minute. I don’t turn mine, but some prefer too.
5. Add vegetables around the chicken
6. Sprinkle herbs and pour in broth
7. Cover and cook on medium-low for 45–50 minutes
8. Stir occasionally and serve warm
