Ingredients
For the mayo
• 130 ml sunflower oil
• 1 egg yolk
• 1 tsp mustard
• Juice of 1/2 lemon
• A little chopped dill
• Roasted garlic, squeezed in
• 1 tsp black caviar on top
For the potatoes
• Small round potatoes
• Water
• 1 tsp baking soda
• 1 tsp salt
For the seasoning
• Chopped rosemary
• Garlic
• 1 tsp salt
• Red pepper
• Lemon zest
• Olive oil

Method
1. Make the mayo
Add the sunflower oil, egg yolk, mustard, and lemon juice into a container.
Blend until it becomes thick and creamy mayonnaise.
Then add chopped dill and roasted garlic. Mix well.
Top with 1 teaspoon of black caviar and set aside.
2. Prepare the potatoes
Wash the small round potatoes very well.
Boil them in water with baking soda and salt until soft.
3. Season the potatoes
Drain the potatoes and set them aside.
In a small bowl, mix chopped rosemary, garlic, salt, red pepper, lemon zest, and olive oil.
Pour this mixture over the potatoes and coat them well.
4. Smash and bake
Place the potatoes onto a baking tray.
Use a glass to gently smash each potato.
Bake in the oven at 220°C for 45 minutes until golden and crispy.
5. Serve
Serve the crispy smashed potatoes hot with the roasted garlic dill mayo.
