Anthony’s Paninoteca on Staten Island is our destination for this episode. Joined by André Hueston Mack (his second appearance on the show) we headed to Great Kills on the South Shore of the Island. Anthony’s keeps things simple: a tight menu of classic Italian sandwiches, all built around seriously good ingredients. No overthinking, just execution.
We ordered Anthony’s Sandwich: thin-sliced Homemade Roast Pork, Sharp Provolone, Hot Cherry Peppers, all piled onto Garlic Bread. Salty, spicy, rich & absolutely loaded with flavor. The Pork alone is worth the ferry ride. Roast Pork sandwiches might be a Philly thing, but Staten Island is holding its own here.
To pair it, we opened Bonny Doon “Le Cigare Orange” from the legendary Randall Grahm. A little saline, a little tangy, with enough texture to stand up to the richness of the Pork and Provolone. The wine soaked up those garlicky, peppery flavors beautifully.
Sometimes the best meals come from following one simple rule: trust the owner’s sandwich.
