Savory French Toast with Parmesan, Mushrooms & Soft-Boiled Egg 🌿

Sound tempting? For 2 people, you’ll need:
For the French toast:
2 large slices of bread (or 4 smaller ones)
2 eggs
120 ml semi-skimmed milk
50 g grated Parmesan
Salt & pepper
A small knob of butter
For the topping:
150 g mushrooms
A small knob of butter
2 small handfuls of arugula (optional)
2 eggs (optional)
Chives
Salt & pepper
Extra Parmesan
Instructions:
Slice the bread.
In a shallow dish, whisk together the eggs, milk, grated Parmesan, salt, and pepper. Dip the bread slices into the mixture, making sure they absorb it well (turn them 2–3 times).
Clean and slice the mushrooms. Heat a knob of butter in a pan. Once hot, reduce to medium-high heat, add the mushrooms with a pinch of salt, and cook for 7–8 minutes.
Bring a large saucepan of water to a boil. When boiling, carefully add the eggs and cook for 6 minutes and 30 seconds. Transfer them to a bowl of ice water before peeling (optional).
Heat another pan with a knob of butter. Add the soaked bread slices and cook over medium-high, then medium heat, until golden brown on both sides (about 3–4 minutes per side).
To serve: plate the French toast, top with mushrooms, arugula, the soft-boiled egg, chives, and extra grated Parmesan if desired. Add a little black pepper and enjoy!
