Dinner at The Nicolett in Lubbock turned out to be one of those meals you don’t expect to find in West Texas. This is a James Beard–recognized restaurant from chef Finn Walter, known for hyper-seasonal High Plains cuisine with serious French technique, and they even have a beautiful private greenhouse dining space filled with plants and twinkling lights.

We started with their famous fry bread with fermented honey butter, followed by a tartare, and a crab starter. The house-made pasta is a must — we had the agnolotti, which is filled with cauliflower and sherry with parmesan cream — and then finished with beautifully cooked beef for the main. Everything felt thoughtful, seasonal, and very much destination-worthy.

If you’re visiting Lubbock, this is absolutely the place to book for a special dinner.
