Ingredients

For the Rice

1 cup long-grain white rice

2 cups water

Pinch of salt

For the Creamy Sausage & Bean Skillet

14 oz smoked sausage, sliced

2 cans (15 oz each) white beans, drained and rinsed

1 cup half & half

1 cup baby spinach

1 small yellow onion, diced

1 chicken bouillon cube

½ cup water (to dissolve bouillon)

Seasonings

1 tsp garlic powder or 6 cloves garlic chopped

1 tsp Italian seasoning

½ tsp black pepper

Salt to taste

(Bouillon & seasonings estimated at $0.20)

Instructions

Cook rice according to package directions (1 cup rice, 2 cups water, simmer 15–18 minutes).

Slice sausage and brown it in a large skillet over medium heat.

Remove sausage and set aside.

In the same pan, cook diced onion until softened.

Add garlic if using and cook for 30 sec

Add beans and the bouillon dissolved in ½ cup water.

Stir in half & half and seasonings.

Return sausage to the pan.

Simmer 5–7 minutes until slightly thickened.

Stir in spinach and cook until wilted.

Serve over rice and enjoy a full meal for $9.59.
