This pot of French Onion Soup slowly grew into something delightful, and so do we, as we learn to lean on and trust in God and His Timing.
Little by little, through small and faithful acts of love, God shapes us into who He created us to be.

Slow food and grace in the ordinary.
Inspired by St. Thérèse of Lisieux 🌹

Recipe:

Ingredients:
– 5 Large Onions, Thinly Sliced
– 2 TBSPs Butter
– 1 TBSP Olive Oil
– 1 tsp Thyme (or Oregano if you don’t have)
– 1 Cup Red Wine
– 4 Cups of Chicken Broth
– Salt and Pepper to Taste
– Ciabatta croutons
– Swiss Cheese for the top

Steps:
1. Caramelize (20 minutes)
Heat butter and olive oil in a large pot over medium heat.
Add onions.
Cook uncovered, stirring every few minutes, until softened and lightly golden.

2. Reduce Heat and continue caramelizing for about 20 more minutes.

3. Deglaze with wine (5 minutes)
Pour in the wine and scrape up all the brown bits from the bottom.
Let it simmer and reduce for about 5 minutes.

4.Add broth, thyme, salt and black pepper.
Bring to a gentle simmer and cook around 10-15 minutes.
Taste and adjust salt.

5. Add ciabatta pieces and top with Swiss cheese.
Broil for a few mins.

Notes:
. No sugar needed — time does the work.
. Freezes well without the bread.
