French onion soup recipe:
Ingredients:
-4 pound bag of yellow onions
-1/2 cup olive oil
-1 cup white cooking wine
-4 cups veggie broth
-1/2 cup nutritional yeast
-bread (any variation – I used a vegan & gluten free option)
-cheese (I used vegan provolone)
-butter (I used vegan butter)
*seasonings – measure with your heart*
-salt
-pepper
-garlic powder
-liquid smoke
Recipe:
1. Chop the onions into strips.
2. Heat olive oil in a medium-high pot then add the onions. Add salt and pepper.
3. Now the onions are going to brown for a longgg time! Let them sit for around an hour stirring occasionally. The pot should build up a brown layer and the onions should become soft and caramelized.
4. Add garlic powder, nutritional yeast, and a few drops of liquid smoke. Mix and let cook for about five minutes.
5. Scrape off the “brown” layer of seasoning that’s accumulated in the pot and mix it in – there’s a lot of flavor in this part of the soup!
6. Add the cooking wine and veggie broth. Boil then let simmer for 15-20 minutes.
7. Butter both sides of your bread of choice and then add a slice of cheese to the top and broil for 3 minutes.
8. Serve the soup in a bowl and top it with your cheesy toast – enjoy!
