HAPPY HOLIDAYS! Today over on YouTube my French Onion Crispy Potato Bites. The filling is a French onion soup condensed hence French onion, crispy potato bites. The potatoes act like a crouton with the French onion, soup, condensed and the cheese they’re absolutely delicious and addictive. You can make them in advance and just reheat them in the oven.

Ingredients:
24 baby Yukon Gold potatoes (about 1-inch size)
4 cups of yellow onions, thinly sliced
4 tablespoons of butter
1 cup lower-sodium beef broth
4 tablespoons of all purpose flour
2 minced garlic clove
4 sprigs of thyme
1 bay leaf
2 teaspoons of diamond kosher salt, divided
2 tablespoons of sherry
1 cup shredded Gruyère cheese
Fresh thyme leaves for garnish (optional)
