Straight from the fridge with what I had on hand. I impressed myself with this one LOL!!
Salad Niçoise. But a modified version. The salad itself was fantastic! Paired with the Cote de Roses, OMG!!! I call this, France meet French/American LOL!
The Dish: Modified Salad Niçoise: Spinach, Kalamata Olives, Spanish Green &Pimento Olives, Capers, Onion slices, Oregano, Simple Vinaigrette: EVOO, White Wine Vinegar, Spicy Mustard, Herbs, Salt and Pepper. If I had to guess the ratio would be 3 parts EVOO to 1 Part Vinegar.
