🍨 Vanilla Bean Crème Brûlée Ice Cream — Detailed Recipe:-

🛒 Ingredients
For the vanilla ice cream
500 ml heavy cream
250 ml whole milk
120 g granulated sugar
5 large egg yolks
1 Madagascar vanilla bean
1 tsp pure vanilla extract
1 small pinch of salt
For the brûlée crust
3–4 tbsp fine granulated sugar
👨‍🍳 Step-by-Step Method
1. Prepare the vanilla
Split the vanilla bean lengthwise with a knife and scrape out all the seeds. Add both the seeds and the pod to the milk and heavy cream.
2. Heat the cream mixture
Place the milk, cream and vanilla in a saucepan over medium-low heat. Heat until steaming and very hot, but do not boil. Remove from the heat and let it infuse for about 10 minutes.
3. Prepare the egg mixture
In a separate bowl, whisk the egg yolks, sugar and salt for 2–3 minutes until the mixture becomes pale and slightly thick.
4. Temper the eggs
Slowly pour about ½ cup of the hot cream mixture into the egg yolks while whisking continuously. This prevents the eggs from scrambling.
Gradually whisk in the remaining cream mixture.
5. Cook the custard
Return everything to the saucepan. Cook over low heat, stirring constantly with a spatula.
The custard should reach approximately 80–82°C and become thick enough to coat the back of a spoon.
⚠️ Do not boil, otherwise the eggs can curdle.
6. Strain and cool
Remove the vanilla pod. Strain the custard through a fine sieve into a clean bowl.
Add the vanilla extract and mix well.
Place the bowl over ice water and stir occasionally until cooled. Cover and refrigerate for 4–6 hours, preferably overnight.
7. Churn
Pour the chilled custard into an ice-cream maker and churn according to the manufacturer’s instructions.
It should become thick, creamy and soft-serve-like.
8. Freeze
Transfer to a freezer-safe container. Press parchment paper directly onto the surface and freeze for 2–3 hours, or until firm.
🔥 9. Create the Crème Brûlée Shell
Take the ice cream out and let it soften for 3–5 minutes.
Place a scoop in a chilled bowl and make the surface as smooth as possible.
Sprinkle a very thin and even layer of fine sugar over the top.
Use a kitchen blowtorch to caramelize the sugar. Keep the flame moving continuously until the sugar becomes deep golden and glass-like.
Let the caramel shell cool for 1–2 minutes so it becomes crisp.
