Dream Provençal Fig Cake

Ingredients
* 100 g almond flour
* 75 g flour (or gluten-free blend)
* 1.5 grams baking soda
* 1 gram salt
* 2 eggs
* 150 grams honey
* 80 grams extra-virgin olive oil
* 80 grams yogurt (really any yogurt will do as long as it’s full fat)
* Zest from about 1/2 of an orange
* About 4-5 figs for cake, cut in half, and then another 2-3 figs for decor
* 2 tbsp sliced almonds
* Extra honey for drizzle
* Fresh edible flowers or lavender sprigs

Method
* Whisk eggs & honey until pale, fluffy, and triples in volume
* Add olive oil, yogurt, and orange zest
* Fold in dry ingredients gently.
* Arrange halved figs onto the bottom of a parchment-lined cake pan – 8 inch/20cm with baking spray.
* Pour batter on top of figs then sprinkle with sliced almonds.
* Bake in a preheated oven at 175°C/ 350°F for about 30-35 min, until golden and set, or toothpick inserted comes out clean.
* Let cool slightly then turn over onto plate. Add figs, almonds, and drizzle with honey. Garnish with lavender sprigs or edible flowers et voila, bon appetit!
