Some recipes are timeless for a very good reason. Justine’s assortment of sandwiches is the ultimate crowd-pleasing platter. Fresh bread, generous fillings, perfect triangles, and one crucial layering technique that ensures every single sandwich is as fresh and delicious as the moment it was made.

Ingredients:
8 slices of fresh wholemeal square bread
8 slices of fresh white square bread
Butter and/or mayonnaise, for spreading
Butter pickles or chutney
An assortment of deli cuts like ham and turkey
Slices of cheddar cheese
Canned beetroot slices, drained and dried
Tomato, sliced
Iceberg lettuce, shredded
Alfalfa sprouts
Carrot, grated
Cucumber, sliced

Method:
Butter or mayo and pickles or chutney on both sides of the bread.

Layer the drier fillings first to create a moisture barrier so the sandwiches don’t go soggy; then add ham, chicken or turkey, followed by vegetables and cheese on top.

Repeat with the remaining bread and fillings.

Cut into triangles and arrange on a platter or in a picnic box with a lid to transport.
