Etoile Cuisine et Bar is Chef Philippe Verpiand’s classic French restaurant in Houston — and with the title Master Chef of France, you can already guess how good it is.
The menu is French through and through: delicate escargot swimming in butter, a proper steak au poivre, and a floating island of meringue and custard to finish. Katie Stone sits down with Chef Philippe to talk through the dishes and the craft behind a kitchen that takes classic French cooking seriously — and makes it absolutely delicious.
