  1. I was gonna give you a like before i saw the sauce dipping thing and i HATE it when people soak the sandwiches in so much till the sauce gets out but ill give you a like anyways

    RECIPE:

    Beef:
    Season a chuck roast heavily with kosher salt and black pepper. Sear in a hot pan with a little neutral oil until deeply browned on all sides.

    Braise:
    Add the beef to a slow cooker with beef stock, sliced onion, smashed garlic, Worcestershire sauce, soy sauce, thyme, garlic powder, onion powder, and black pepper.

    Cook LOW 6–8 hours or HIGH 3–4 hours until fork tender.

    Caramelized Onions:
    Cook a bunch of sliced yellow onions in butter with a pinch of salt and sugar over medium-low heat until deeply golden and jammy, stirring occasionally so they don’t burn.

    Horseradish Sauce:
    Mix together mayo, sour cream, prepared horseradish, lemon juice, chives, salt, and pepper. Set aside.

    Au Jus:
    Remove the beef and strain the cooking liquid into a saucepan. Simmer until reduced and richer in flavor. Kill the heat & finish with a few cubes of cold butter for a glossy au jus.

    Beef:
    Lightly shred the beef (don’t turn it into mush). Toss with a little au jus to keep it juicy.

    Build:
    Toast French rolls or demi baguettes with butter. Add horseradish sauce, beef, caramelized onions, and provolone cheese. Broil until melted.

    Serve:
    Serve immediately with the hot au jus for dipping. Dunk aggressively and enjoy, friends 🙂
