Guga took Jamie Oliver’s infamous steak video and made Uncle Roger sit down to see if Jamie adds any special ingredients. After 20 years working in professional kitchens, I have witnessed plenty of culinary crimes, but this steak experiment might be the ultimate betrayal.   1. IMHO.

    Most olive oils have a low smoke point compired to other cooking oils, so its not ideal for searing steak unless youre using a refined or light olive oil which does have a higher smoke point.

    If you're not sure its better to go with a neutral high temperature oil with like canola or avacado oil. 🤔

  4. I actually cannot stand jamie oliver! Thanks to him we have a sugar tax which does not sound so bad on paper but basically he has made sure the responsible are punished along with the irresponsible! And all due respect we were not all born with a silver spoon like he was!! And he said go to yiur supermarket and as for a sirloin for two!!! Would love to know the supermarket he buys his sirloin from because there all prepacked and most of the time you only get to see one side there for gamble on if its a decent steak or full of gristle! So jamie go back to your drums! Rant over lol

  5. I am always amused when people say that med rare brings out the best flavor in steak, but then want to drawn out that "flavor" with salt, pepper, butter, garlic, and herbs.

  7. If you're using cast iron to cook a steak you use butter as the fat. If you use olive oil switch over to butter you masochist.

  8. No salt, we are cooking steak, no salt, …… Im not sure it can be called steak or cooking with no salt.

  9. Notice how none of these "experts" noticed he turned the steak when taking it out of the pan.. This is cause heat rises..

  15. oh dear gawd Jamie Olive oil… like, c'mon, he couldn't have ground up those rosemary and thyme and used it like a marinade before grilling the steak? facepalm

  16. grill marks don't impress me much but sometimes if I'm doing a particular cut of steak (like say sirloin, or flatiron), I like to do the little diamond pattern superficial cuts on the surface so it'll lay flatter in the pan and doesn't curl so much. I also like to get rid of any silverskin for the same reason (and cook the silverskin until crispy so I can eat it!)

  18. There is a difference from learning new techniques or ironing out bad habits to having zero common sense 😂😂. There was one chef who taught me who cooked the steak in a pan let it rest then used a hot metal skewer to make the perfect "charred" diamond design on the presentation side. 😂

  20. They know that the steak is different when he is putting it in the plate because of the grill marks. The pan that Jamie is using puts large, deep marks, as seen earlier in the video. That steak has thin, surface marks. It was done on the barbeque. So, he did one in the pan to show how (which he did wrong) and then had a bunch made on the barbeque in case that one failed.

  21. Well, guga's point about the grill marks is definitely valid, if the whole steak is the color you described they should have – at that point, with a perfect crust everywhere else, the grill marks have to be burn marks 😉

    I do like using a griddle pan with way too much oil for steaks though, gets you a crust almost as if you deep fried it 😂 the griddle just makes sure the oil gets into contact from below

    Is that healthy? Probably not 😉 but I don't eat steak that often, so it's fine I hope

  22. Potato stew with a good steak is wrong. If your steak is really good, some fries or some rice or mashed potatoes will be all you need with it, so the steak can shine.

    Well, I guess some caramelized onions to go along with it are also acceptable, but you gotta use at least some of the fat the steak was fried in for them 😉

    Regardless: no side dish that can stand on its own (but then guga of all people can't say a thing about that, being the king of "my side dish is an entire meal and well worth a separate video of its own" himself) unless it's a cheaper cut and needs a sauce anyway, I guess

  23. When I make pesto, I just brush the pasta with some basil leaves. It works just as well, who needs to do all those extra steps with herbs?

  24. If you have a massive freezer, find a friend or two and go to a farmer and ask if you can buy a whole cow. Pay the farmer, and not just for the meat( you will pay per kilo, but if you offer him 10-20% more per kilo then his price from the industry), he will sell, pay also for his work(delivering the cow to the transport), pay for the transport of the cow to the butcher, pay for the butcher, and then you will get your half cow worth of meat, a lot cheaper then any other way. The initial costs are high, but all worth it. If you do it this way, everyone will win except for the middelma(e)n and the supermarket.

  25. Honestly the steak, though wasn't stellar, wasn't horrendously mangled or anything.
    First steak, if you wanted rare it'd be pretty spot on. Even crust over grill marks. Grill marks work in open flames because the fire Sears the meat. In the pan, the only high heat contact is the ridges, you don't get the proper heat in-between.

  26. Uncle Roger complained about coating the steak with olive oil, then asks "where your oil" when Jamie puts the steak in the pan: a pan which has ridges that would keep the steak out of the oil unless Jamie had poured at least 0.25 inch into the pan!

    Back to Jamie – I'm not sure I like filling the house with the aroma of burning rosemary – as if it were some Wiccan sage blunt! I guess that it kind of makes sense, though, since he's sweeping with it like a stereotypical witch's broom! Still, without any oil or fat, that rosemary is going to start smouldering pretty quickly – and I question how much of the steak fat will be picked up, since only one direction (well, two with the 180) will allow it down between the ridges!

    Gotta agree with Guga & Uncle – it takes pretty poor production values to make a steak video, then only actually taste the side dish. Kinda hilarious, but I don't think Jamie intended to make a comedy …
