    1 pack instant ramen noodles
    3 large onions, thinly sliced
    2 tbsp butter
    1 tbsp olive oil
    250ml beef stock
    60ml (1/4 cup) thickened cream
    1 tsp soy sauce
    1/2 tsp Worcestershire sauce
    1/2 tsp sugar
    1/2 tsp black pepper
    Gruyère or Mozzarella
    Fresh chives (optional)

    Steps
    1. Heat butter and olive oil in a pan over medium heat.
    2. Add sliced onions and cook slowly for 15–20 minutes, stirring occasionally, until deeply caramelised and golden.
    3. Pour in beef stock, soy sauce, Worcestershire sauce, sugar, and black pepper. Simmer 3–5 minutes.
    4. Cook ramen noodles separately according to packet, then drain.
    5. Stir cream into the onion mixture and simmer 2–3 minutes until slightly thickened.
    6. Add cooked noodles to the pan and toss to coat.
    7. Place cheese on top and let it melt into the noodles.
    8. Finish with Cheese and herbs if using, then serve immediately.
