    • 6-8 slices thick bread (brioche)
    • 2 eggs
    • 1 cup milk (or ¾ cup milk + ¼ cup cream)
    • 1 tbsp sugar
    • Pinch of salt

    Method
    1. Preheat oven to 375°F (190°C)
    2. Whisk eggs, milk, cream and sugar
    3. Soak the bread slices in the mixture for 1-2 mins
    4. Drizzle castor sugar on the slices and Bake 20 mins (This will give caramelized top)

    Easy Berry Compote

    Ingredients
    • 2 cups blue berries (fresh or frozen)
    • 2-3 tbsp sugar (adjust to taste)
    • 1 tbsp lemon juice

    Method
    1. Add berries, sugar & lemon juice to a saucepan over medium heat
    2. Cook 5-7 mins, stirring occasionally, until berries break down
    3. For thicker compote: add cornstarch slurry, cook 1-2 more mins

    Texture tip
    • Less cook time = chunkier
    • More cook time = smoother & jammy

    Serve French toast with
    Maple syrup, berry compote & powdered sugar
