  1. French Onion Chuck Steak Pot Roast
    Ingredients:
    850g–1kg chuck steak
    5 large brown onions, sliced
    4 cloves garlic, minced
    1 tsp dried thyme
    1 heaped tsp Dijon mustard
    2 tbsp Worcestershire sauce
    1 heaped tbsp plain flour
    1 litre beef stock (or 3 cups beef stock + 1 cup white wine)
    2 bay leaves
    Sea salt & black pepper
    Olive oil
    To Serve:
    Mashed potatoes
    Peas or greens
    Parmesan cheese
    Method:
    Season the chuck steak with salt and pepper. Heat olive oil in a pan and brown the meat on all sides. Remove and set aside.
    In the same pan, add sliced onions. Cover and cook on low heat, stirring every 5 minutes for 20–25 minutes until soft and caramelized.
    Add garlic, thyme, Dijon mustard, and Worcestershire sauce. Mix well. Sprinkle flour over and stir to combine.
    Pour in the beef stock and add bay leaves. Return the beef to the pot and cover.
    Cook using one method:
    Dutch oven: 160°C for 3.5 hours
    Slow cooker: Low 6–8 hours or High 4–6 hours
    Oven dish: Cover with foil and bake at 160°C for 3.5–4 hours
    Once tender, shred the beef and mix it into the onion gravy.
    Serve hot with mashed potatoes, greens, and a generous sprinkle of parmesan cheese.
