Here’s a simple Andhra-style French Beans High Protein Sabji recipe that’s quick and easy to cook. This version keeps it healthy and protein-rich by adding peanuts or chickpea flour (besan).

Andhra French Beans Protein Sabji

Ingredients (Serves 2–3)

French beans – 250g, chopped

Oil – 1–2 tsp (preferably sunflower or sesame)

Mustard seeds – ½ tsp

Urad dal (split black gram) – 1 tsp

Chana dal (split Bengal gram) – 1 tsp

Dry red chilies – 2

Curry leaves – 8–10

Green chilies – 1–2, slit

Ginger – 1 tsp, finely chopped

Turmeric powder – ¼ tsp

Salt – to taste

Peanuts – 2 tbsp (or roasted chana dal / 2 tsp besan)

Fresh coriander – for garnish

Instructions

Prep French Beans: Wash and chop French beans into 1–2 inch pieces.

Temper Spices: Heat oil in a pan. Add mustard seeds. Once they splutter, add urad dal, chana dal, dry red chilies, and curry leaves. Fry till dal turns golden.

Add Aromatics: Add green chilies and chopped ginger. Sauté for 30 seconds.

Cook Beans: Add chopped French beans, turmeric, and salt. Stir well. Cover and cook on low-medium flame for 6–8 minutes, stirring occasionally.

Add Protein: Coarsely grind peanuts (or use roasted chana dal). Sprinkle over the beans and mix. Cook for another 2 minutes. If using besan, roast 1–2 tsp in a dry pan for a minute and sprinkle.

Finish & Garnish: Turn off heat, garnish with fresh coriander. Serve hot.

Tips

Add a small splash of water while cooking if needed to avoid burning.

For extra protein, you can mix in soaked and boiled moong dal or tofu cubes.

Serve with rice, roti, or millets for a wholesome Andhra-style meal.
