French bistro style Steak Frites for two
Fries Ingredients:
3 russet potatoes
Olive oil
Salt, pepper, and herbs de Provence
Method:
Cut potatoes into thin, even strips.
Parboil: Drop into salted boiling water for 2–3 minutes. Drain, pat completely dry, and season.
Pan-crisp: Heat large ceramic non-stick pan over medium-high. Add olive oil and cook fries in a single layer, tossing until golden.
Steak Ingredients:
2 steaks (NY strip or tenderloin)
Salt and black pepper
1 tbsp olive oil
2 tbsp butter
Fresh herbs, for garnish
Method:
Season steaks generously.
Heat ceramic non-stick pan over medium-high. Add oil, and sear steak 2–3 minutes per side.
Lower heat slightly, add butter and baste. Target doneness: 130–135°F for medium rare.
Rest steak 5 minutes, then slice and garnish with fresh herbs.
