Chop suey is officially a Chinese inspired American dish. The name makes it sound Asian instead of calling it random veggies and meat stir-fried in a random sauce served over rice.
Its crazy, we live in NE. and my mother always made chop suey wich was kinda like spaghetti and I couldn't stand it even loving spaghetti. But that chop suey you just made i could eat every day
I heard a very well educated Chinese man once say [ to the effect ] that Chop Suey is just a Combining of a Lot of Ingredience. And I would guess that Chow Mein is a Specific Two or more ingredients and finished off with Whatever is Called for.

Chop suey is literally kitchen scraps, so there shouldn't be a fixed recipe.
