Ingredients:
1 oz gin with butterfly pea tea extract (ie: Empress)

½ oz fresh lemon juice

½ oz simple syrup

3-4 oz sparkling wine

Lemon twist, for garnish

Directions:
1. In a cocktail shaker filled with ice, add gin and simple syrup. Shake for 30 seconds.

2. Strain into a flute or coupe glass. Stir in lemon juice.

3. Top with sparkling wine and garnish with a lemon twist
