🥖 INGREDIENTS
French Toast Custard
6 thick slices brioche bread
3 large eggs
½ cup heavy cream
¼ cup milk
3 tbsp sugar
1 tsp vanilla extract
1½–2 tsp instant coffee powder
Pinch of salt
Butter for frying
Coffee Crème Anglaise
¾ cup heavy cream
½ cup whole milk
4 egg yolks
⅓ cup sugar
1½–2 tsp instant coffee powder
1 tsp vanilla extract
Pinch of salt
Mascarpone Cream Filling
½ cup mascarpone cheese (cold)
¾ cup heavy whipping cream (cold)
3 tbsp powdered sugar
½ tsp vanilla extract
Toppings
Cocoa powder
Chocolate shavings
👩‍🍳 INSTRUCTIONS
1️⃣ Coffee Crème Anglaise
Heat heavy cream and milk until steaming (do not boil).
Stir in instant coffee powder until dissolved.
Whisk egg yolks and sugar until pale.
Slowly pour hot cream into yolks while whisking constantly.
Return mixture to pan on low heat.
Stir constantly until thick enough to coat the back of a spoon.
Remove from heat and add vanilla and salt. Keep warm.
2️⃣ French Toast Custard
Whisk eggs, heavy cream, milk, sugar, vanilla, instant coffee powder, and salt until smooth.
Dip brioche slices 8–10 seconds per side only.
3️⃣ Cook French Toast
Heat butter in a pan over medium heat.
Cook toast 2–3 minutes per side until golden and custardy inside.
4️⃣ Mascarpone Cream
Whip mascarpone, heavy cream, powdered sugar, and vanilla until fluffy.
5️⃣ Assemble
Place one slice of French toast.
Add mascarpone cream.
Top with second slice of French toast.
Add more mascarpone on top.
Pour warm coffee crème anglaise.
Finish with cocoa powder and chocolate shavings.
