Instead, we’re going to suggest you try this obscure, throwback Burgundian red wine from Labouré-Roi called a Passe-Tout-Grains.
Instead of being 100% Pinot Noir, this wine is a blend of Pinot Noir and Gamay. You get the best of both grapes with bright acidity, red fruit, and just enough body to stand up to that rich braise without overpowering it.
