Ingredients

Macaron Shells

100 g almond flour (very fine)

100 g powdered sugar

70 g egg whites (about 2 large eggs), room temperature

70 g granulated sugar

Gel food coloring (optional)

1๏ธโƒฃ Sift almond flour + powdered sugar
2๏ธโƒฃ Whip egg whites, add sugar โ†’ stiff glossy peaks
3๏ธโƒฃ Fold dry mix into meringue (lava-like batter)
4๏ธโƒฃ Pipe small circles on tray
5๏ธโƒฃ Tap tray, pop air bubbles
6๏ธโƒฃ Rest until tops are dry
7๏ธโƒฃ Bake at 150ยฐC / 300ยฐF โ€“ 15 min
8๏ธโƒฃ Cool, fill, sandwich, chill
