Classic French Macarons
Ingredients
Macaron Shells
100 g almond flour (very fine)
100 g powdered sugar
70 g egg whites (about 2 large eggs), room temperature
70 g granulated sugar
Gel food coloring (optional)
1๏ธโฃ Sift almond flour + powdered sugar
2๏ธโฃ Whip egg whites, add sugar โ stiff glossy peaks
3๏ธโฃ Fold dry mix into meringue (lava-like batter)
4๏ธโฃ Pipe small circles on tray
5๏ธโฃ Tap tray, pop air bubbles
6๏ธโฃ Rest until tops are dry
7๏ธโฃ Bake at 150ยฐC / 300ยฐF โ 15 min
8๏ธโฃ Cool, fill, sandwich, chill
