120g milk🥛
150g egg 🥚
70g sugar🧂
20g fresh yeast
8g salt 🧂
100g butter🧈
Dough
1.Mix all ingredients except salt and butter
*All ingredients must be cold ❄️
2.Add salt and knead for 10 minutes smooth firm and elastic
3.Add cold butter and knead for another 5-7 minutes until smooth
4.Ferment at room temperature for 1.5 hours
5.Divide the pieces into 70g and form
6.Proof about 1hour at room temperature
7.Bake at 175c(with convection)20min.
Vanilla soak
100g milk 2.5%
100g double cream 30%
50g egg (1 pcs )
75g sugar
Vanilla bean
1.Bring the milk and cream to a boil with vanilla(and leave for 10min)
2.Add eggs,sugar and mix
Caramel
100g sugar
180g double cream
25g butter
2g salt
1.Cook in the middle heat until sugar is caramelized
2.Add hot double cream and mix
3.Add butter and salt
4.Blend
Chantilly
200g double cream
50g sour cream
50g powder sugar
1.Mix all ingredients.
