Think the croissant is French? Think again. France didn’t invent its most famous pastry—they stole it.
While legend claims Viennese bakers created crescent rolls after defeating the Ottoman Empire in 1683, crescent bread existed long before that siege. In 1838, Austrian officer August Zang brought dense Kipferl rolls to Paris at his Boulangerie Viennoise. French bakers hijacked the recipe, introduced lamination, and added mountains of butter to transform the dense roll into a flaky global icon.
You’re not eating French history—you’re eating an Austrian survival roll re-engineered with butter.
