Ingredients

* 5–6 large yellow onions, thinly sliced
* 3 tbsp butter
* 1 tbsp olive oil
* 3 cloves garlic, minced
* 1 tsp sugar
* ½ cup dry white wine, optional
* 6 cups beef stock
* 1 tsp fresh thyme
* 1 bay leaf
* Salt and black pepper
* 1 baguette, sliced
* 1½ cups Gruyère cheese, grated
* Fresh parsley or thyme, for garnish

Method

1. Melt butter and olive oil in a large heavy-bottomed pot.
2. Add the sliced onions and a pinch of salt. Cook slowly over medium-low heat, stirring occasionally, until deeply caramelized and golden brown.
3. Add the sugar and garlic, then cook for another 1–2 minutes.
4. Pour in the white wine and scrape the browned bits from the bottom of the pot. Simmer until mostly reduced.
5. Add beef stock, thyme, and bay leaf. Season with salt and black pepper.
6. Simmer gently for 25–30 minutes to develop the flavor.
7. Toast the baguette slices until crisp.
8. Ladle the hot soup into oven-safe bowls and place toasted bread on top.
9. Cover generously with Gruyère cheese and broil until the cheese is melted, bubbling, and golden.
10. Garnish with fresh thyme or parsley and serve immediately. 🧅🧀🔥
