This is my new favorite Sunday dinner! It turned out even better than I expected!

Ingredients
1 lb. filet tips (I used @north40beef American Wagyu)
2 cloves garlic, minced
1/4 cup beef stock
2 tbsp. salted butter
1 large white onion, thinly sliced
1 tbsp. balsamic vinegar
2 tsp. sugar
Salt, pepper, garlic seasoning
Thyme
Gruyère, for garnish

Instructions
1️⃣ Season the meat with the SPG seasoning.

Melt the 2 tablespoons of salted butter in a skillet over medium heat. Sear the filet tips, but remove them from the skillet before they’re fully cooked.

Sauté the onions and garlic until fragrant, about 10 minutes.

Then, stir in the sugar and thyme.

2️⃣ Once the onions are browning, about 10 more minutes, add the balsamic vinegar and stock.

Cook until the onions are caramelized and most of the liquid has reduced, about 20 minutes. If the liquid is gone, add a little more stock to keep the onions from sticking to the pan.

Add the filet tips back in and stir together.

3️⃣ Make your gravy. I used my starchy potato water as the base (about 1 cup), then added a tablespoon of beef bouillon and a teaspoon of balsamic vinegar. I thickened it with a cornstarch slurry mix until it was the right consistency (about 1/8 cup cold water with a tablespoon of cornstarch).

4️⃣ Serve the french onion filet tips over mashed potatoes. Drizzle the gravy over the top.
